this is due to the local caching taking place within Pro. You can disable the caching for this layer by going to the layer properties > cache tab. With this disabled you will see the live values.

Solution de contournement

Save, close, and reopen the ArcGIS Pro project. The Attribute window will show the expected values in the calculated field.
