After converting a survey created from ArcGIS Survey123 Web Designer to ArcGIS Survey123 Connect and republishing it, the prepopulated choices no longer appear.

When the Name and Label in the choice list sheet are set to the exact field name, the drop-down choices populate as expected when accessing the survey from the browser.
