Error
When the UpdateLayer function (arcpy.mapping.UpdateLayer) is used to produce a copy of a layer, the properties change of one layer is automatically applied to the other layer.

The method to change the symbology is different in ArcGIS Pro (arcpy.mp). This is not addressed in ArcMap (arcpy.mapping).Solución alternativa
Double-click the symbol below the first layer name to open the Symbol Selector dialog box, and change the symbology again to change the symbology of the first layer independently of the second layer.
