The pop-up info on the provided hosted layer view published from ArcGIS Pro has all fields set as visible when you look at the item info. ArcGIS Online Map Viewer is honoring the pop-up defined on the item and is working as expected. Updating the pop-up when publishing from ArcGIS Pro gives the expected result and does not have fields written into the non-existing pop-up.

Solución alternativa

Open the hosted feature layer in ArcGIS Online Map Viewer.
Open the pop-ups configuration pane.
Click 'Select fields'.
Select and unselect a few of the fields. Click Done.
This should change the field number to 6/6, 3/33, 48/48 and so on.
On the Layers pane, click the layer and click the ellipses beside the layer whose pop-ups were configured.
Click Save.
This applies the pop-up changes to the map view. Refresh the page.
