The Search widget in ArcGIS Web AppBuilder only displays results starting with the text written in the search box.

As designed. Layers must be Full Text Search indexed to work with "Contains" and the implicit first % parameter.Solución alternativa
In ArcGIS Enterprise Portal 11.1, add a '%' in front of the search to get the 'contains' search. For example, if using 'ar', search '%ar' in the Search widget, and it returns any result with 'ar' in its string.
