Error

The 'Point to Raster' tool creates a raster with a No Data value when the output is written to a file geodatabase and all points fall within the same cell in the output raster.

It's a limitation. Cannot create a single cell raster in a file geodatabase.

Solución alternativa

The output of the 'Point to Raster' tool works successfully when points fall within the same cell if the output is to any raster format other than file geodatabase raster.
