'Preserve editor tracking info' does not preserve created_date and last_edited_date fields when publishing to ArcGIS Online.

Solución alternativa

Create two new fields in ArcGIS Pro, and use Field Calculator to copy the existing entries to those new fields. Then, publish to ArcGIS Online.

Note: This does not allow those fields to be used for future edits, but at least the data is not lost.
