Error
Overwriting a service with ArcGIS Pro does not update the thumbnail.

While overwriting, there are two options for metadata. From the documentation, it is either "use the item description from the web layer" by default or "use the item description from the map or layer". From the video shared, the former option is selected on overwrite due to which thumbnail is not overwritten. In order to overwrite metadata (summary, tags, description, thumbnail, use limitation, and credits), use the second option while overwriting. Change the thumbnail in the item details in the Contents tab (in Portal for ArcGIS or ArcGIS Online).
