The sort feature functionality in the Attribute Table widget is included in Web AppBuilder for ArcGIS (Developer Edition) 2.11 (December release of ArcGIS Online). Portal for ArcGIS 10.6.1 uses Web AppBuilder for ArcGIS (Developer Edition) 2.8. This feature will be included in the future release of Portal for ArcGIS. For users who need this functionality, use Web AppBuilder for ArcGIS (Developer Edition).
