In ArcGIS Online Map Viewer, feature geometries can still be edited even when the hosted feature service editing setting only allows for 'Attributes only' editing.

Layer owners and administrators have the ability to perform any edits regardless of the layer's configuration. In ArcGIS Online Map Viewer Classic, this ability is available through the 'Open in Map Viewer Classic with full editing control' option.
