Error
ArcMap displays domain and subtype code values in attribute tables and labels for a feature service while the map viewer in Portal for ArcGIS shows descriptions for domain and subtypes.

The issue is not to be addressed in ArcMap. ArcGIS Pro has expanded feature service editing capabilities.Solución alternativa
Apply a domain for the field used as the subtype. For the other field, create one domain which includes all the values instead of multiple domains.
