ArcGIS Pro text formatting tags used to define the field alias is not honored in the attribute table.

Although special characters and spaces are allowed for field alias names, formatting tags are only available for labeling and annotation (Refer to the following documentation: https://pro.arcgis.com/en/pro-app/help/mapping/text/text-formatting-tags.htm). This is why the raw tags are seen in the table. Currently, there is no plan to support this functionality for table headers.
