Why are attribute fields marked red when viewed in ArcPad?

Answer

The red field is indicating that this field is used for symbology.

For an example of this, review the Riverside sample data in the \ArcPad 7.1\Samples\Riverside folder. 

Note:
The ZoneCode field in the Parcels feature layer is red, which indicates that it is used for symbology.
