The entire text is selected while editing the text field in Collector for ArcGIS (iOS) 19.2.0.

Workaround

Triple tap

1. Enter edit mode and double tap on a specific word in the text value. This only selects the specific word which is tapped.
2. Once the word is selected, tap at the end of the text value and the cursor appears. Now the existing string value is editable.

 OR

Change Selection

1. Enter edit mode and the entire text value is selected. Observe that there are two anchor points. One at the start of the selection and one at the end of the selection.
2. Move the last anchor point and then tap at the end of the text value and the cursor appears. Now the existing string value is editable.
