Editing a field directly from the attribute table and selecting a new field within the same record does not enable the Save button on the Edit tab in ArcGIS Pro.

After review by the development team, it has been determined that this issue is related to a known limitation with the software that lies outside of Esri's control. The issue's Additional Information section may contain further explanation.
Additional Information
For now, the Save button will not become enabled until a user hits Enter to commit a change while editing. Overall, table performance would significantly decrease if an edit was committed after tabbing. If you would like to save edits by hitting tab, there are options to adjust the auto-save method. Go to the Project tab on the ribbon, select "Options" and "Editing". Expand the "Session" section and check on the "Automatically save edits" option. You can either do it at a timed interval or by operation count. This will bring up the "Save Edits" dialog for you.
Workaround
Use the Attributes pane since pressing Tab or selecting a different field prompts the option to save.
