Workaround

1. Use ArcMap to publish the feature services.2. Add the ArcGIS Pro feature service to a web map in ArcGIS Online, then click 'Save Layer' for each point/polygon layer.There is no need to change the symbology.This updates the JSON of the feature service, making it now supported with Collector for ArcGIS on Windows 10.When downloading the map in Collector for ArcGIS on Windows, the points and polygons renders just fine.
