Could not reproduce using ArcGIS Desktop 10.3.1 (build 4959)

Workaround

Creating a copy of the MXD using the 'saveACopy' function before running the 'findAndReplaceWorkspacePaths' function will allow the data's path to be set to Universal Naming Convention (UNC).
