When publishing a service to ArcGIS Online from a feature class in ArcMap, if a definition query of any kind is applied to a field with name 'PRIMARY' or 'primary' (not case sensitive), the layer shows up blank in ArcGIS Online.

Workaround

Use a different field name if applying definition query in ArcMap, export selected records to a new feature class or shapefile with no definition query applied, or use the Filter option in ArcGIS Online once published.
