What does the Transfer Geometry option do?

The Transfer Geometry option, in the Attribute Transfer Mapping options dialog box under the Spatial Adjustment toolbar, modifies the target feature's dimensions and spatial orientation to that of the feature in the source layer.

This functionality is only available when the target feature and source feature have the same geometry type; for example, when both are polygon features.
