While overwriting the underlying feature class using the ‘Feature Class to Feature Class’ geoprocessing tool, the corresponding referenced map service does not reflect the updated changes until the service is restarted.

Additional Information
When the schema of a feature class used in a map service is modified, restarting the map service is required to see the updated schema.Workaround
Utilize the Truncate and Append geoprocessing tools to modify only the features in the feature class. This retains the feature class schema and does not require a service restart.
