When viewing selected or queried records in the Table widget in ArcGIS Experience Builder, the resulting table does not honor the fields configured in the layer settings.

Workaround
Configure a sheet within the Table widget. After selecting or querying records, use the 'Show selection' icon directly within the Table widget rather than the 'View in Table' option when using the Select and/or Query widget.
