When using the Quick Export Tool or Spatial ETL Tool to Convert a Feature Class to Coverage, the projection definition is dropped in the output.

Workaround

--In ArcCatalog, Right-clicking the file > Export > To Coverage. The projection remains defined.--Define the Projection to the Output Coverage.
