When updating data using the Append tool, it is not possible to select a field other than the Object ID.

This is as designed. When the 'Optimize performance for feature services' parameter is checked, the Append tool uses the Append API for update operations. This restricts the 'Matching Fields for Update' parameter to one pair of matching fields, both of which must be indexed and unique. When the 'Optimize performance for feature services' parameter is unchecked, the tool uses ApplyEdits for updates, allowing the functionality available in ArcGIS Pro 3.4 and earlier versions.Workaround
Run the Append tool with the 'Optimize performance for feature services' parameter unchecked.
