When publishing a feature service to ArcGIS Online, having text fields in the form of 'beforetext<aftertext' eliminate the text after the '<' symbol and only display the text before the '<' symbol.

Workaround

Change the form from 'beforetext<aftertext' to 'aftertext>beforetext'.
