Additional Information

Based on the following ArcGIS Online documentation, https://doc.arcgis.com/en/arcgis-online/manage-data/manage-hosted-feature-layers.htm#ESRI_SECTION1_1D3A87A80E3E4CD2A71744715F1522FE, it is stated that "You must use the same source file type and schema when you overwrite a hosted feature layer." Overwriting is only meant for changing data and not schema. If the schema of the service needs to be changed, users must use Admin API to add fields to the feature service layer. Refer to the following link for more information, https://developers.arcgis.com/rest/services-reference/add-to-definition-feature-layer-.htm#example1.
