When opening the Add Rasters To Mosaic Dataset tool from the Catalog pane, the processing templates are unavailable after viewing the Environments tab.

Workaround
Open the Add Raster To Mosaic Dataset tool directly from the Geoprocessing pane, the processing templates are available after navigating back and forth from the Environments tab.
