When editing the Field Map parameter in the Export Table dialog box in ArcGIS Pro, hovering over a field and clicking the Remove button deletes the field and other selected fields.

This issue is addressed in ArcGIS Pro 3.4.

Workaround

Manually select the field to be removed from the field map and then click the Remove button instead of hovering and clicking.
