When editing in a shared web map, styles (symbology) saved to the map fails to display correctly.

This is known limit. The types and templates setup by the owner on the service are respected to go with the renderer on the service. The service uses a simple renderer and the webmap has a color renderer saved. Since those renderers are different and the user is not an owner or admin (who could save the changes to the service), switch to the renderer on the service while editing. The renderer reverts when leaving the edit mode.Workaround
