When editing ArcGIS Online hosted feature layers added to a web map via Copy or via the service URL, the symbology set in the web map reverts to the originally published symbology.

Publish as hosted layers. From that you can create a view with each editing config

Workaround

Add layers to the web map via the Map Viewer > Add > Search for Layers.
