When creating an Elevation Service of 32-Bit DEMs, the floating point values are not maintained within the Table of Contents.

Workaround

Specify the floating point values within the layer properties under the symbology tab. Change the Strech type to Minimum-Maximum > Check on Edit High/Low Values > Modify the floating point values to be the correct values. This will only maintain the floating point values while the user operates within this session of ArcMap. Once the Service is added back into ArcMap at a later date the values will revert back to integer.
