When appending records to a feature class with the unique values symbology, a few symbol classes lose their unique colors and default to a single color (R:130 G:130 B:130).

Workaround
Use the 'Add unlisted values' option in the Symbology pane to add the values created from the Append tool with an appropriate color scheme.
