When an exported stretch raster function template is applied to a mosaic dataset or an image service published from ArcGIS Pro, the image is displayed with the RGB composite rendered by default instead of the stretched color ramp.

Additional Information

A raster function processes pixels and produces a processed raster, so when using a raster function to visualize a one band image as an RGB image (such as applying a shaded relief on a DEM), the processed output is a 3-band image. When saving a renderer as a function template, even when applying it in ArcGIS Pro, the output is an RGB image which represents the processed output that is used for visualization.
