When adding a geodatabase directly to ArcGIS Online and editing the pop-up in the Visualization tab, after saving the changes, the Data tab organizes the fields alphabetically.

Additional Information

Currently the data tab table is associated with pop-up properties and in this case uses the default field order set on the pop-up. For the data table to work independently from the pop-up, please submit an enhancement request.
