When a user excludes any of the editor tracking fields from the file geodatabase (FGDB) Schema when publishing a hosted feature services, attempts to edit the data fail with the following error message: "Error 500: Database error has occurred message or an Error 500: JSONObject not found error message".

Workaround

Go back into ArcGIS Pro and turn back on the editor tracking field and then republish the affected data.
