When a feature class is labeled using a field with a field name longer than 10 characters, exporting the layer as background data to shapefile via the ArcPad Data Manager toolbar generates an APL file referencing a randomly selected field to use for labeling.

Workaround
1. Export the feature class to a shapefile, and check out the data.
2. Export as background data (to AXF layer).
3. Use a field with field name less than 10 characters.
4. Manually modify the APL file to reference the correct field.
In ArcPad, modify the 'Labels using field' value in Layer Properties > Label tab.
