This is a known limitation of the Feature Class to Feature Class tool, which is to be deprecated in ArcGIS Pro 3.1. The functionality of the Feature Class to Feature Class tool is provided by the Export Features tool beginning in ArcGIS Pro 3.0. The issue with the Model Builder workflow described here no longer occurs with the Export Features tool.Workaround
