After the Create Table tool runs, 'Enable Editor Tracking' can be successfully set on the output in the newly released ArcGIS Pro 3.3.2 and the 3.4_54271 development version.Workaround
- Create the table in the Catalog pane instead of using the geoprocessing tool.
- Enable editor tracking.
