Using 'identify' to query in a REST map server service and setting the 'return FieldName' parameter to 'false' does not display aliases, but the real field names when returned.

This issue is fixed in ArcGIS Pro 3.4 and ArcGIS Enterprise 11.4.Workaround
After adding the data to the map in ArcGIS Pro, open the attribute table and rearrange any column in the table randomly (the column can be moved back to the same place then). This must be done before publishing the data to ArcGIS Server as a map service.
