Uploading a feature layer with a definition query to ArcGIS Online and editing the queried feature service in Map Viewer causes irreparable and irreversible data loss.

This is not a Map Viewer bug and no data is lost. The Map Viewer is honoring the definitions set at the service level in the service definition file set by ArcGIS Pro. Publish the layer with no definition query and use views, or set a filter on the layer within the web map or the layer gives you the experience to adjust filters and see all the values.Workaround
