Updating the Default Font settings in ArcGIS Pro does not honor the new font when creating labels, legends, and scale bars.

With labeling, this is as designed. Even though labeling was not previously toggled on, a label class already existed on the layer because every feature layer has 1 label class by default, and that label class has a font specified. Change the Contents pane to the Labeling view. This view shows all of the label classes for each layer in the map to indicate whether labeling is toggled on or off for each label class. Layers that are not labeled still have a label class in this view. The default font applies to new items, hence the default font is used when adding a new label class to the layer. With the layout items, this is also as designed. Most layout items, except for text, are added from the style gallery. Style items have font options. When adding a scale bar or legend in the gallery, this selects the font and the style which was saved. For this workflow, create a new style with the desired font properties. Since text items are not selected from a style, but rather the text shape, it honors the style set in the Options dialog for text.
