It is expected behavior when showing or hiding fields in the Data tab does not save the layer.Workaround
The best approach for sharing data with others without displaying the specific fields is to create a hosted feature layer view. Refer to, https://doc.arcgis.com/en/arcgis-online/manage-data/create-hosted-views.htm.
