Additional Information
If a specific workflow is followed, the desired results are received.
Steps:
1. Set the ArcGIS Pro option for ‘Use field types that are compatible with ArcGIS Pro 3.1 and earlier releases when adding query layers and text files’ option to true.
2. Create the database view from the underlying table that has the date field type.
3. Add the view to the map.
4. Use the layer as input into the 'Register with Geodatabase' tool (very important step).
5. Remove and read the registered view to the map.
6. Publish.
The Date field does not have an asterisk in the Fields view if it is opened from the Contents pane > Layer right click > Data Design > Fields.
Workaround
Publishing works if the view is not registered to the geodatabase.
