Additional Information

This issue is not reproducible. Ensure the layer name in the field_mapping parameter matches the layer name. When these match, the field names are updated to the aliases as expected.

Workaround

Perform the same process in the Field Mapping pane within the ArcGIS Pro user interface. This process eliminates the automation aspect.
