Additional Information

This is not reproducible in ArcGIS Pro 2.6.0 and ArcGIS Pro 2.7.0.

Workaround

  • Add the field manually from the attribute table, or
  • Use the Add Field (Data Management) tool to the output of the Feature Class To Feature Class tool.
