Typing three Polish letters with diacritics (right Alt+A , right Alt+X, right Alt+C on a Polish enabled keyboard) into the attribute table has no effect in ArcGIS Pro 3.0.0 and 3.0.3.

Workaround
Edit the feature attributes in the Attributes pane, or paste (Ctrl+v) the Polish characters ą, ź, and ć into the attribute table.
