Additional Information
This is fixed and will be available with the next ArcGIS Online update. The field list is not properly syncing with what was set on the layer. Delete or update the field pick list to see the correct fields show up.Workaround
Edit the fields element in the Configure Pop-ups pane as this will sync the fields element with the table visibility. Click the back arrow to save the auto-update.
