In 10.1, the time text in the map and layout views can be formatted to hide or show the time along with the date.

Workaround

In ArcGIS 10, in Layout View of ArcMap, you can insert Dynamic Text to display the Data Frame Time. Here you can choose to display the date and time in a variety of formats. See help - http://help.arcgis.com/en/arcgisdesktop/10.0/help/index.html#/Adding_time_text_to_your_map/005z00000025000000/Note - the user can also use the Time Slider instead of the Time Animation. However, the dynamic text can be used with either options.
