There is no way to change geocoding options, such as minimum match and minimum candidate score, within the Interactive Rematch window in ArcGIS Pro.

Workaround

In ArcGIS Pro, add the locator to the project, then right-click and select Locator Properties.Change the geocoding options here, then re-run the Geocode Addresses geoprocessing tool.
