The Unique Values symbology with a single attribute does not display the layer name in the legend item if the 'All other values' option is unchecked before the legend is added.

Workaround

The layer name is visible if the single attribute symbology has the 'All other values' option checked before the legend is added. Go to the Symbology tab and uncheck the 'All other values' option, the layer name will still be visible in the legend.

If the 'All other values' option is checked before the legend is added, no matter what changes are made after the legend is added, the layer name will still be visible.
