Additional Information
When changes are made to the layer's style, the Editor tool does not automatically update to reflect these changes. In order to import these changes, the user should save their changes and then open up the Templates experience either in Map Viewer (under 'Configure editing'), or Field Maps Designer. New work has been done in this area, and the user will likely be presented with a message about the style and templates being out of sync, with an option to update them. Updating and saving should then populate the Editor tool with the new template options.
Workaround
Navigate to Map Viewer Classic > Edit > Manage > Save Changes.
Saving the changes in Map Viewer Classic fixes the unique symbols in Map Viewer and ArcGIS Field Maps when editing.
